Instructions

Temperature
  1. Soften the Flavor-building ingredients such as onion, garlic, celery, or ginger, usually cooked near the start.. Heat the oil in a heavy 4-quart pot or Dutch oven over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until softened, about 5 minutes. Stir in the garlic, dried thyme, and allspice; cook for 30 seconds.
  2. Build the pot. Stir in the rice until coated. Add the coconut milk, water, kidney beans, salt, pepper, and whole Scotch bonnet, if using. Bring the mixture to a gentle boil (212°F), taking 4 to 6 minutes, and stir once to distribute the beans.
  3. Cook covered. Reduce the heat to low, cover tightly, and cook without stirring until the rice has absorbed the liquid and is tender, 18 to 22 minutes. If the pot becomes dry before the rice is tender, add 2 tablespoons water, cover, and cook 3 to 5 minutes longer.
  4. Rest, Use a fork to gently separate cooked grains without crushing or mashing them., and serve. Remove the pot from the heat and let it stand covered for 10 minutes. Remove and discard the Scotch bonnet. Fluff the rice gently with a fork, then serve with lime wedges and cilantro, if using. The pepper is there for perfume and peril; do not slice it into the pot unless you mean it.

Rice choice

Use standard long-grain white rice. Brown rice and quick-cooking rice need different liquid and timing, because apparently rice enjoys paperwork.

Storage and reheating

Cool leftovers promptly, refrigerate in a covered container within 2 hours, and use within 3 to 4 days. Reheat portions until steaming hot throughout; add a splash of water and cover to restore moisture.

Pepper handling

Keep the Scotch bonnet whole for milder heat. Wash hands, knife, and board well after handling hot peppers, and avoid touching your eyes.

Add greens

Stir in 4 cups baby spinach after the rice rests, then cover for 2 minutes to wilt it.

Use pigeon peas

Replace the kidney beans with an equal amount of drained and rinsed canned pigeon peas.

Make it heartier

Serve with a fried egg or a side of roasted vegetables. Cook eggs until the whites and yolks reach your preferred safe doneness.
