Miso-Glazed Salmon
The broiler does the dramatic work here: it caramelizes the miso glaze while the salmon stays tender. Keep an eye on it—sugar under a broiler has ambitions.

Instructions
- Heat the broiler. Set an oven rack 5 to 6 inches from the broiler element. Line a rimmed baking sheet with foil and set it on the rack while the broiler heats on high, about 500°F, for 5 minutes.
- Make the glaze. Whisk the miso, mirin, sake, brown sugar, and ginger in a small saucepan. Bring to a gentle Cook in liquid with gentle, occasional bubbles—not a full rolling boil. over medium heat, whisking, then cook for 3 to 5 minutes until smooth and slightly thickened. Remove from the heat and divide the glaze between two small bowls.
- Prepare the salmon. Pat the salmon dry. Carefully remove the hot baking sheet, brush the foil with the oil, and place the salmon skin-side down on the sheet. Brush the fillets with the glaze from one bowl; reserve the second bowl for finishing. Do not return a brush that touched raw fish to the reserved glaze.
- Cook with strong heat from above, usually close to the oven’s top heating element. and glaze. Broil until the glaze is browned in spots and the thickest part of the salmon reaches 145°F. Begin checking at 6 minutes; thick fillets may need up to 10 minutes. If the glaze darkens too quickly, move the pan down one rack.
- Finish and serve. Rest the salmon for 2 minutes. Spoon the reserved glaze over the fillets and scatter with scallions and sesame seeds, if using. Serve hot with rice and a crisp vegetable.
Food safety
Cook salmon to an internal temperature of 145 F at the thickest point. Keep the finishing glaze separate from the portion used on raw fish, and discard any glaze that contacted the raw salmon.
